dice 1 pound of onions
thinly slice 5 pounds of onions
put onions and water into pot with lid on
bring to boil and stir every 1-3 minutes
when almost all water is boiled off and onions are very soft, drop in butter and oil and stir until butter melts
stir every 5 minutes making sure bottom of pan doesn't get too black
when onions turn a nice dark brown, pour in chicken stock
stir pot with wooden spoon or something to scrape browned bottom into soup
bring to simmer and let sit
eat it when it seems ready
